Daily average SegWit v0 vs Taproot output counts
Short ranges plot one point per block, about one every ten minutes. Longer ranges plot one point per day, computed from every block in that day. How it is computed depends on the chart: some average, some total the day up, some are a ratio of the day's sums, and each chart says which. Either way a brief spike inside a day is smoothed away.

Definition
Which version of the witness programme an output uses. SegWit v0 arrived at block 481,824 in 2017 and Taproot, which is v1, at 709,632 in 2021. An output commits to one of them, so counting versions shows the upgrade spreading through the output set.
How it is measured
Counts of outputs by witness version, from the stored script classification. Only versions this site recognises are counted, so a future witness version would not appear until the site learns to recognise it.
The two bands behave differently before their own activations. No v0 output exists anywhere before block 481,824. Twenty P2TR outputs do exist before 709,632, in nineteen blocks, the first on 2019-12-17 and so nearly two years early, though fourteen of those blocks fall in 2021 and thirteen in the last two months before activation. A witness program is a valid output to create before the network agrees what spending it requires, so under consensus rules those twenty were anyone-can-spend until Taproot activated, while relay policy treated such a spend as non-standard and would not have carried it without a cooperating miner.
